These cookies are my trademark, which is why, with all modesty, I’ve aptly named them Brian’s Famous Cakey Chocolate Chip Cookies! From Get Your Bake On.
Makes 12 cookies
Okay… so I actually have my dear, amazing mom to thank for this “famous” recipe of mine—she used to make the same dough into bar cookies, and called them Chocolate Cheevies. Whatever the name, I know I cannot even think about having a party or gathering without serving these.
2¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
14 tablespoons (1 ¾ sticks) unsalted butter, at room temperature
¾ cup granulated sugar
¼ cup packed light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
½ teaspoon pure almond extract
1 cup semisweet chocolate chips
1 cup 60% cacao chocolate chips
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl, whisk together the flour, baking soda, baking powder, and salt and set aside.
In the bowl of a standing mixer fitted with the paddle attachment, cream together the butter and both sugars on medium speed until light and fluffy, 2 to 3 minutes. Add the eggs, vanilla, and almond extract, and beat until well combined, about 1 minute. Reduce the speed to low and add the flour mixture, mixing until just combined. Stir in the chocolate chips.
Use a 2-inch ice cream scoop or heaping tablespoon and drop the dough about 2 inches apart on the prepared baking sheets. Bake until the cookies are golden around the edges and set in the center, 10 to 12 minutes. Remove from the oven and let cool on the baking sheets for 1 to 2 minutes. Transfer to a wire rack and let cool completely.
